History
The Egly Ouriet maison was founded around 1940 around the end of the Second World War, when Charles Egly bought about three hectares of vineyards in the Grand Cru of Ambonnay. Over time, Charles Egly decided to expand his Maison by buying another eight hectares of vineyards in the municipalities of Ambonnay, Bouzy and Verzenay and in addition, another three hectares of vineyards located in the municipality of Vrigny have recently been added. Francis, grandson of the founder, with a lot of work and with a lot of attention to the smallest details has been able to bring the production of Champagne to the highest levels of quality, on a par with the other great Champagne Maisons.

Production method
The Pinot Noir vineyards are located in an area with particular characteristics, in fact they are thirty centimeters above the Craie. “Les Crayèrs” is produced according to the so-called Champenoise method or classic method, a method in which the wine basically undergoes two different fermentations: the first, the alcoholic one (which it shares with the rest of the wines) takes place in wooden barrels for fermentation , without the inoculation of selected yeasts. After fermentation, the base wines are blended and the cuvée referments in the bottle according to the classic method with a period of 50 months on the lees before disgorgement. Bottling is done without filtering or sizing.

Tasting notes
It is presented in the glass with a bright golden yellow color, with a fine and continuous perlage. The nose is complex, there are hints of citrus fruits, red fruits, cedar and lemon; it also has an excellent minerality. In the mouth it is round and fresh, light, persistent and with a lot of character.
Possible combinations
Excellent champagne to toast on the most important occasions, nothing prevents you from trying it combined with a dinner based on white fish and a combination with a fillet of beef cannot be ruled out.
