History
The Chiappini farm is located in the beating heart of the Bolgheri DOC area, on the Via Bolgherese, where some of the main wineries in the area are located. The family of owners is the story of a family of farmers from the Marche who immigrated to the area around the 1950s; the first important point of reference was Giovanni Chiappini, who is now supported by his two daughters Martina and Lisa. The company has grown hand in hand with the denomination, and today various labels are produced with respect for the vineyard and nature, including Bolgheri-style cuts and pure expressions of the same vines. The company was born in the years in which Bolgheri was far from the modern conception of a wine place and in fact mainly vegetables and other foodstuffs were grown; today the company includes 27 hectares of property, 15 of which are planted with vineyards, which make possible an annual production of 80,000 bottles. The company has been organic since 2010.

Production method
Produced for the first time in 2000, the vineyards of origin are the Grottine vineyard dating back to 1978 and the Felciaino 1986. The grapes are harvested manually in boxes but at different times depending on the achievement of ripeness for the different varieties. The grapes are destemmed and pressed upon arrival in the cellar and sent for alcoholic fermentation in stainless steel thanks to indigenous yeasts naturally present on the skin of the grapes. Aging takes place in French oak barriques, 15% of which are new for 20 months, with a few more months in the bottle before being placed on the market.

Tasting notes
The wine has an intense and dark garnet red colour. On the nose, the wine is elegant and complex, with a bouquet of spices such as tobacco, licorice, vanilla and roasted coffee; notes of very ripe red fruit, balsamic notes, iodized minerality and dried flowers follow. Equally complex and complete on the palate, soft, alcoholic and with great structure. Deep, mineral and with silky and ripe tannins; closed by a balanced acidity and a very long and bewitching finish.
Possible combinations
Chiappini Guado de’ Gemoli is one of the great wines produced in the Bolgheri denomination, inspired by the great vins rouges of Bordeaux. Meditation wine, it gives its best if left to age for a few years in the cellar. Perfect for pairing with structured and tasty meat dishes, or with aged cheeses.
