History
The Chiarli family has been producing wines in Emilia for five generations. The Modena Cellar, created in 1925, is the historic headquarters of the company. With the advent of the third generation, large autoclaves began to be used for sparkling wine with the charmat method at controlled temperatures. The fourth generation sees the birth of the Lambrusco DOCs and the confirmation of the company’s high quality standards. In 2000 the Cleto Chiarli project was created, with the introduction of the Lambrusco Premium, Vigneto Cialdini and Lambrusco del Fondatore labels, which tell the story of Lambrusco in all its nuances.

Production method
Grapes from different vintages are used and vinified according to the Martinotti-Charmat method for the second fermentation, with yeasts already placed in large pressurized containers where the must is fermented. This method produces wines with more delicate and aromatic bubbles, ideal for the more delicate grapes that cannot resist the prolonged stay on the lees as in the classic method. The grapes undergo a traditional pressing with cold maceration before being refrigerated and placed in an autoclave.

Tasting notes
The color is deep pink. The nose has aromas of red fruit and strawberries, small berries. In the mouth it is fresh, vibrant and mineral, the sip is velvety and surprisingly pleasant.
Possible combinations
Perfect as an aperitif or wine to drink by the glass for lovers of the genre. Ideal with cured meats and creamy cheeses, or with typical dishes of the Romagna tradition such as tortellini or boiled meats.
