History
The Philipponnat house is one of the most famous and prestigious champagne houses in France, founded in 1522 in the Ay region. The maison was one of the official suppliers to the court of King Louis XIV and has maintained prominent positions over the centuries thanks to the introduction of new winemaking techniques, such as the use of reserve wine with the Solera technique. Today the company owns about 20 hectares of vineyards, including the famous Clos de Goisses, whose champagne was Gianni Agnelli’s favourite. Charles Philipponnat, the last heir of the family, is currently the head of the company.

Production method
This wine is produced using the methode champenoise or classic method, which involves two separate fermentations. The first fermentation occurs in vats, and the second fermentation takes place in the bottle with the help of specific yeasts, which produce carbon dioxide and the characteristic bubbles of the wine. The wine is left to rest for at least 96 months on the lees before disgorgement.

Tasting notes
Intense golden color with very fine and persistent perlage. On the nose notes of acacia honey, raisins, large mineral and citrus nuances, intertwined with notes of vanilla, brioche and melted butter. On the palate it is explosive, creamy and intense; the very fine effervescence caresses the palate, giving the product a stratospheric elegance. On the finish, citrus and pastry notes are clearly perceived again.
Possible combinations
Is it really important what we combine with such a sacred monster? Excellent with foie gras, white meats and noble poultry. Excellent with tasty and good quality fish dishes.
