History
Jean-Michel Guillon, originally from the Paris region, moved to Burgundy in 1980 to pursue his passion for viticulture. He built his domaine from scratch, acquiring parcels in the best climats of Gevrey-Chambertin and surrounding areas. Today, together with his son Alexis, he continues to produce high-quality wines recognized internationally.

- 100% Pinot Noir.
Production method
- Harvest: Handpicked with careful selection of grapes.
- Vinification: Traditional fermentation with temperature control to preserve fruity aromas.
- Aging: Aged in French oak barrels, with a significant percentage of new wood to add complexity and structure to the wine.

Tasting notes
- Color: Deep ruby red with garnet highlights.
- Aroma: Complex aromas of red and black fruits, such as cherry and blackberry, accompanied by spicy notes and well-integrated wood nuances.
- Taste: On the palate, it offers a velvety structure with mature tannins and balanced acidity; the finish is long and persistent, with mineral and fruity notes.
Pairing suggestions
Pairs perfectly with red meat dishes, such as beef tenderloin or roasted lamb, game, and aged cheeses. Also excellent with French cuisine dishes like coq au vin or boeuf bourguignon.
