History
Domaine Robert Chevillon is a family-run winery located in Nuits-Saint-Georges, at the heart of Burgundy’s Côte de Nuits. The Chevillon family has been cultivating vineyards for generations, with a consistent commitment to quality and respect for the terroir. The “Vieilles Vignes” (old vines) used for this wine are of significant age, contributing to the complexity and depth of the final product.

- 100% Pinot Noir
Production method
- Harvest: Manual harvesting with careful selection of the grapes to ensure the highest quality.
- Vinification: Traditional fermentation in oak vats, with temperature control to preserve the fruity aromas and finesse of the wine.
- Aging: Maturation in French oak barrels for 15 to 18 months, with a percentage of new oak to add complexity and structure to the wine.

Tasting notes
- Color: Bright ruby red with violet highlights.
- Aroma: Aromas of ripe red fruits such as cherry and raspberry, complemented by floral notes of rose and hints of orange zest.
- Taste: Medium-bodied on the palate, with silky tannins and a pleasant freshness. Flavors of red fruits blend with spicy nuances and a light minerality, leading to a long and saline finish.
Possible pairings
Pairs perfectly with dishes like roasted lamb, ribeye steak, duck breast, and game. It is also excellent with soft cheeses and washed-rind varieties such as Époisses, Langres, or Soumaintrain.
