History
Fabien Coche is a fourth-generation winemaker who took over the family estate in 2005. Located in Meursault, the domaine spans approximately 11 hectares, encompassing prestigious appellations such as Meursault, Monthelie, Pommard, and Auxey-Duresses. Since 1998, the family has practiced organic farming, with over 60% of the vines being over 60 years old.

Production method
- Grape origin: From two parcels with vines aged between 30 and 60 years, located in Meursault and Pommard.
- Vinification: 100% destemmed, with no pigeage (punching down) or remontage (pumping over).
- Aging: In 300-liter barrels, bottled before the August harvest to avoid overt oak influence.

- 12.5% vol.
Tasting notes
- Color: Vibrant ruby red, indicative of youthfulness and liveliness.
- Aroma: Aromas of fresh red fruits, such as cherry and raspberry, intertwined with spicy notes of black pepper and cloves. Subtle undertones of undergrowth and truffle add an earthy and complex dimension.
- Taste: Silky and velvety texture, with fruity flavors dominated by juicy cherry and wild berry notes, accompanied by delicate hints of licorice. Supple and well-integrated tannins provide structure, while the fresh acidity imparts a beautiful liveliness. The finish is long and elegant, leaving a pleasant fruity aftertaste.
Possible pairings
This wine pairs beautifully with delicate dishes such as roasted poultry, duck breast, or sautéed mushrooms. It is also an excellent match for soft cheeses.
