History
Marie-Noëlle Ledru, often referred to as “the Lady of Pinot Noir,” is a highly reputed vigneronne in the Champagne region. She personally manages her vineyards in Ambonnay and Bouzy, cultivating vines with an average age of 30-40 years. Her production is limited and artisanal, with a portion of the grapes sold to prestigious Maisons like Deutz and Pol Roger. The Cuvée du Goulté is one of her most refined expressions, produced only in the best vintages.

Production method
The grapes come from Grand Cru vineyards located in Ambonnay, characterized by chalky and limestone soils. Fermentation occurs spontaneously in stainless steel tanks, without the addition of selected yeasts. Malolactic fermentation is completed, and the wine ages on the lees for at least 60 months, developing complexity and depth. The dosage is Extra Brut, with a very low sugar content, around 1 g/l, enhancing the purity and minerality of the wine.

Tasting notes
In the glass, it displays an intense straw-yellow color with fine and persistent bubbles. The nose reveals pleasant notes of bread crust and pastry, with a finish reminiscent of flint. On the palate, it offers great elegance and class, being deep, intense, long, and pleasantly savory.
Possible pairings
Perfect as an aperitif, it pairs wonderfully with fish dishes, shellfish, and fresh cheeses. Its structure also makes it ideal with land appetizers and meat-based first courses.
