History
Salgemma is the first wine produced by Sergio Genuardi, a pure Nero d’Avola that reflects the uniqueness of the Casteltermini terroir in the Agrigento hinterland. The name “Salgemma” derives from the sparkling rock salt spires that, under the sun, enrich the local landscape. This wine represents Genuardi’s commitment to enhancing native Sicilian varieties through sustainable winemaking practices.

Production Method
The grapes, grown on chalky-limestone soils at an altitude of 540-600 meters above sea level, are hand-harvested. Fermentation is spontaneous, using only indigenous yeasts, without temperature control, with a 5-day maceration. Aging occurs 75% in fiberglass tanks and 25% in tonneau for 2 months. The wine is unfiltered and rests 3 months in the bottle before release.

Tasting Notes
With a bright ruby red color, Salgemma offers an aromatic bouquet of cherries, raspberries, blackberries, and wild strawberries, accompanied by floral notes, dried herbs, salted capers, and a chalky minerality. On the palate, the wine is vibrant, dry, and essential, with exemplary freshness, sapidity, and gentle astringency, providing character and persistence.
Pairing Suggestions
Ideal with grilled red meats, roasts, and game. It also pairs well with aged cheeses and Sicilian cuisine, such as caponata and pasta alla Norma.
