History
Founded in 1897 by Ernest Cazals, Maison Claude Cazals is located in Mesnil-sur-Oger, one of the most renowned villages of the Côte des Blancs. Today, under the leadership of Delphine Cazals, the estate continues to produce high-quality champagnes, respecting family traditions and enhancing the unique terroir of its vineyards.

Production Method
The grapes come from over 40-year-old Grand Cru vineyards located in Oger and Le Mesnil-sur-Oger. Alcoholic fermentation takes place in stainless steel, followed by malolactic fermentation. The cuvée consists of 80% wines from the current vintage and 20% reserve wines. The second fermentation in the bottle lasts at least 36 months, with a final dosage of about 6 g/l.

Tasting Notes
It presents a golden color with green reflections and fine, lively bubbles. The nose reveals hints of brioche and white flowers, while the palate unveils citrus aromas, particularly lemon, enhancing the sensation of freshness. The structure is elegant, with pleasant minerality and a long, harmonious finish.
Suggested Pairings
Perfect as an aperitif, it pairs wonderfully with seafood dishes, shellfish, sushi, and light appetizers. Also excellent with fresh cheeses and fruit-based desserts.
