History

The Eredi di Cobelli Aldo farm is located in Sorni di Lavis, in Trentino. The family has cultivated the land since the 14th century and now the children are carrying on the tradition. The estate has a privileged position with chalk and limestone soils and a microclimate that allows the production of elegant and fragrant wines. The cellar was created from an old stable and next to it is the tasting room, which was the old family cellar.

Production method

The grapes are carefully harvested, using a manual method to avoid damaging the bunches. The bunches are then transferred to the pneumatic press, where they are delicately squeezed. The must obtained is then fermented in stainless steel containers and left in contact with its lees for a period of 8 months. After this, the wine is aged in the bottle for a further 9 months before being released for sale.

Tasting notes

Light straw yellow color with greenish reflections. The nose perceives elegant notes of citrus and white flowers, accompanied by hints of aromatic herbs. In the mouth, it manifests itself with a pleasant freshness and a light minerality, with a delicate fruity texture that recalls apple and peach.

Possible pairings

It is perfect to taste with light appetizers, fish-based dishes, shellfish and fresh cheeses. It goes splendidly with Mediterranean cuisine, enhancing the flavors and aromas of every course.
