History
Federico Graziani began in the world of wine very early, at just 15 years old he enrolled in sommelier courses and in 1998 at just 23 years old he won the competition as the best sommelier in Italy at 23 years old. This allowed him to gain experience alongside big names such as Gualtieri Marchesi, Stefano Cavallino, Bruno Loubet, Cracco Aimo and Nadia Moroni. Finally in 2006 he deepened his studies and obtained a degree in Oenology and met Salvo Foti who encouraged him to become a producer. By chance he learned of a century-old vineyard that was about to be uprooted in Passopisciaro, so he decided to buy it and a few years later his first wine was released: Profumo di Vulcano. The fruit of an encounter with the traditions and flavors of a unique territory.

Carricante, Riesling Renano, Gewurztraminer, Chenin Blanc and Grecanico
Production method
The wine undergoes spontaneous fermentation with indigenous yeasts, does not undergo malolactic fermentation, matures on its own fine lees for approximately 12 months and after a period of 6 months of refinement in the bottle it is ready to be released on the market.

Tasting notes
Bright white with greenish hues. Intense aromas of fresh tropical fruit, rose, white musk, lemon granita and salt. On the palate it is harmonious, fresh, fine and salty with a persistent aftertaste. It recalls the freshness of the snow and the salinity of the Mediterranean.
Possible pairings
It pairs very well with raw fish dishes, seafood, oysters, shellfish and wild asparagus.
