History
We are in Avirey-Lingey in the southern part of Champagne; the company has been family-run since around 1760 and today has around 12 hectares of vineyards.

Pinot noir 65%
Chardonnay 35%
Production method
It is produced according to the so-called methode champenoise or classic method, a method in which the wine essentially undergoes two different fermentations: the first, the alcoholic one (which it shares with the rest of the wines) takes place in fermentation vats; the second instead takes place directly in the bottle and ensures that during this second process, thanks to special yeasts, the wine also develops carbon dioxide (which then when uncorked will give life to the famous bubbles). In this product the grapes used come from a single harvest.

Tasting notes
Intense straw yellow color, with a golden note, persistent perlage. Fruity aromas of apple, pineapple and apricot emerge on the nose, accompanied by pleasant notes of brioche bread. On the palate you can perceive a vibrant freshness and a long persistence.
Possible pairings
Perfect as a gift or to celebrate an important occasion with special people. Perfect with appetizers and first courses, better if a little fatty and tasty therefore based on cheese, mushrooms and/or delicate fish.
