History

Dom Pérignon is a prestigious champagne brand initially founded by Moet & Chandon. The first harvest dates back to 1921, although the first release on the market took place only in 1936 following the Great Depression and the collapse of champagne sales; production is only done in the best years. Usually the bottles are released on the market at least 8 years after the harvest for the Brut, at least 12 for the Rosé.

Production method

It is produced according to the so-called methode champenoise or classic method, a method in which the wine essentially undergoes two different fermentations: the first, the alcoholic one (which it shares with the rest of the wines) takes place in fermentation vats; the second instead takes place directly in the bottle and ensures that during this second process, thanks to special yeasts, the wine also develops carbon dioxide (which then, when uncorked, will give life to the famous bubbles).

Tasting notes

It has a bright straw yellow color, with a fine and persistent perlage. Intense on the nose, with aromas of fresh yellow-fleshed fruit and citrus, followed by more complex notes of yeast, sweet toasted almond and some iodine hints. Soft on the palate, but with considerable power; the fruity notes are clearly perceived together with the more mature and saline ones.

Possible pairings

It is the ideal companion for a special evening with friends and/or special people. It can also go very well with dishes that deliberately seek a contrast or a very particular consistency; try it with fish tartare such as amberjack or tuna, also flavored with citrus fruits.
