History
Pojer e Sandri is a Trentino wine cellar founded in 1975 by Fiorentino Sandri and Mario Pojer. Born by chance, it immediately achieved success with its first wine, the Palai Müller Thurgau 1975. Despite the difficulties of the area, the founders focused on heroic viticulture, gaining experience and innovation from visits to other wineries. Currently, Pojer e Sandri owns approximately 30 hectares of vineyards distributed in six municipalities, benefiting from the breeze of the Ora del Garda. The main vineyards are located in the Val di Cembra, of volcanic origin, and in Faedo and San Michele, with sedimentary and calcareous soils. The company grows different varieties of grapes, from the most traditional to the most resistant, and the cellar is a place of continuous experimentation, with unique labels inspired by Albrecht Dürer.
Production Method
The Chardonnay, Pinot Noir, and Pinot Blanc grapes are harvested in 100 kg crates and refrigerated immediately. The following day, the grapes are washed, dried, and pressed in a controlled atmosphere to preserve the fruit and reduce the use of external antioxidants. Fermentation takes place in small wooden barrels on wheels; once complete, the barrels are rotated weekly by 180° to maximize the contact between the yeast and the wine. In spring, the cuvée is prepared: 50% wine from the latest harvest and 50% reserve wines from previous vintages, some of which come from disgorged old vintages aged 15–20 years. After resting on the lees for two years, disgorgement is carried out without the addition of sugar.

Tasting Notes

- Aroma: Aromas of yellow fruit and pastry notes such as hazelnut, butter, brioche, and barley coffee.
- Taste: Dry, full-bodied, and rich, with great overall harmony.
Pairing Suggestions
Ideal as an aperitif, it pairs perfectly with fish dishes, shellfish, cheeses, appetizers, and desserts. It is excellent for celebrating special occasions or for an informal toast with friends.
