History
La Maison Lamiable carefully manages a small estate of just over five hectares, divided into various parcels, located in highly prestigious terroirs, which guarantee the production of the highest quality grapes. The agricultural practices faithfully follow the traditional methods handed down over time, reflecting the centuries-old savoir-faire of the area. The champagne comes to life from the estate’s best Pinot Noir and Chardonnay vineyards, located in the Grand Crus of Bouzy and Tours-sur-Marne.

Production method
It is produced according to the so-called champenoise method or classic method, a method in which the wine essentially undergoes two different fermentations: the first, the alcoholic one (which it has in common with the rest of the wines) takes place in fermentation vats; the second, however, takes place directly in the bottle and ensures that during this second process, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles upon uncorking).

Tasting notes
Intense straw yellow color with a golden hue. On the nose, it is refined and elegant, with aromas of lime peel, orange blossom, white fruit and mineral notes of iodine and chalk. In the mouth, it is clear and vertical, with a deep and persistent taste, characterized by a pleasant flavor and a long persistence that ends with a vibrant citrus freshness.
Possible combinations
It can be accompanied by fish, shellfish, cheeses, appetizers and desserts. Furthermore, it is perfect for celebrating special occasions or for an informal toast with friends.
