History
The company called Castellaccio has its headquarters in the north-eastern part of the Chianti Classico territory, precisely in the valley at the foot of the village of Lucolena, which falls within the municipality of Greve in Chianti. The vineyards managed by the company extend on the slopes of the Chianti Mountains, at an altitude varying between 400 and 600 metres, thus characterizing the aromatic profile of the wine they produce. It is important to note that all the company’s vineyards are registered in the register of the Chianti Classico wine consortium. Starting from 2014, the company has chosen to join the organic farming conversion program, using only products and production techniques permitted by this form of agriculture. This decision reflects the company’s commitment to more sustainable and environmentally friendly agricultural practices.

Production method
The company is committed to environmental optimization through the adoption of organic farming products and energy efficiency. To this end, fermentation vats are used which carry out the pumping over process without requiring the use of electricity, but using exclusively the CO2 generated during the production cycle. Furthermore, thanks to the use of Ganimede-type winemakers, the company has invested in highly specialized equipment for grape fermentation. These winemakers allow the cap to be mixed continuously through automatic pumping over, exploiting the carbon dioxide produced during the fermentation process.

Tasting note
Intense ruby color. On the nose aromas of ripe fruit, violets and balsamic notes. In the mouth it is lively and dry, with a balance of flavor and a light tannic note, which over time blends into softer and more harmonious aromatic nuances.
Possible combinations
It pairs perfectly with roast or grilled meat, game and mature cheeses.
