History
Produced by the maison Serge Mathieu. We are in Avirey-Lingey in the southern part of Champagne; the company has been family-run since about 1760 and today it has about 12 hectares of vineyards.

Pinot noir 90%
Chardonnay 10%
Production method
It is produced according to the so-called methode champenoise or classic method, a method in which the wine undergoes two different fermentations: the first, the alcoholic one (which it shares with the rest of the wines) takes place in vats for fermentation; the second instead takes place directly in the bottle and ensures that during this second procedure, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles when uncorked).

Tasting notes
Pink color with a golden-orange hue, with lively and persistent perlage. Intense aromas of wild strawberries and berries on the nose, with a hint of tertiary finish. In the mouth full-bodied, linear and persuasive, with a slightly spicy finish with references to fresh fruit.
Possible combinations
Ideal if paired with aperitifs and fish or white meat first courses.
