History
Olivier Leflaive’s life is very unusual, he is the nephew of Joseph, an entrepreneur who, after the failure of his steel businesses at the end of the First World War, decides to concentrate on the family estate in Burgundy. Despite having studied economics, Olivier decides to follow his passion for music, first becoming an artist and then a manager of various folk groups. In 1981, at the age of thirty-six, he decided to return to Burgundy to take care of the family business, Domaine Leflaive.
After only a few years, his curious spirit pushes him to create something new. In 1985, realizing that he did not own vineyards in the AOC required by an important distributor, Olivier and his brothers Patrick and Vincent decided to found Olivier Leflaive Frères. Their intention was to buy grapes and must, vinify them following the tradition of their family estate and then sell them directly. Today, Olivier vinifies grapes from more than 120 hectares located in three of the most famous AOCs of the Côte de Beaune: Puligny-Montrachet, Chassagne-Montrachet and Meursault, as well as Chablis and the Côte Chalonnaise. He also owns 17 hectares of vineyards following the division of Domaine Leflaive in 2010.
Not satisfied, Olivier also begins to produce champagne in collaboration with Erick de Sousa, although the products are marketed under the name of Olivier Leflaive.

Production method
The Bourgogne Blanc Puligny Montrachet 2020 by Olivier Leflaive is produced with Chardonnay grapes coming exclusively from vineyards located in the famous area of Puligny Montrachet, in Burgundy. The production method involves the manual harvesting of the grapes, which are then taken to the cellar to be pressed with a pneumatic press. After the alcoholic fermentation, which takes place in stainless steel tanks at a controlled temperature, the wine is aged for 15 months in oak barrels and steel containers.

Tasting notes
It is presented in the glass with a straw yellow color with greenish reflections. On the nose, the bouquet is broad and intense, characterized by floral notes of white flowers, accompanied by hints of fresh fruit, such as green apple and white peach. Mineral and butter nuances are also perceived, which give the wine a pleasant complexity.
On the palate, the wine is fresh and harmonious, with excellent acidity that balances the softness of its texture. The sapidity and minerality make the sip pleasant and long, with a persistent and pleasant finish.
Possible combinations
It goes perfectly with fish and shellfish dishes, but also with delicate first courses and fresh cheeses.
