History
Julien Launois together with his wife Sarah took over the family business in 2010 and started producing their cuvées in 2015 under the name of Paul Launois in honor of their son. They have around 6 hectares in the Cotes des Blancs, with beautiful parcels also in Mesnil-sur-Oger.

Production method
The wine was produced with an equal combination of vinification in steel and wooden containers, with the remaining part of the reserve wine produced only in wood. The fermentation was spontaneous and carried out the malolactic fermentation.

Tasting notes
Straw yellow colour. On the nose, hints of pear and flowers are perceived, in addition to the classic roasting aromas. On the palate, the wine is fresh, with white and yellow fruit tones, a creamy texture and a mineral note.
Possible combinations
Ideal as a classy aperitif or with fish appetizers in general. So yes to scallops, sushi, sashimi and salmon, to name a few. Also suitable on a first course, especially if it has fatty components to reduce, such as cheese, butter, etc. or a light smoke.
